The scent of summer and Mediterranean cuisine

Aromatic basil is one of the kings of the kitchen. Its dark green, curved leaves have a spicy and unmistakable aroma, reminiscent of jasmine, licorice, and lemon. Dishes from the Italian province of Liguria, in particular, are characterized by its fragrance, and the most famous creation of this cuisine is pesto alla genovese. Incidentally, Basilico genovese bears the DOP seal (DOP = di origine protetta), signifying a protected designation of origin.

Natural habitat:  Basil's natural range extends from tropical Africa and Asia, and it is now found throughout the Mediterranean region.

In the kitchen:  Basil is best picked when its leaves are still small, as this is when its flavor is most intense. Basil is the culinary ingredient for Mediterranean dishes and the perfect partner for tomatoes, salads, and sauces. And, of course, it is ideal for making pesto. To prepare it, you will need lightly toasted pine nuts, basil, Parmesan cheese (or a vegetarian alternative), olive oil, garlic cloves, and a pinch of salt. Tip: The secret to the basil from the Ligurian town of Pra, home to some of the best basil in the world, is said to be light fertilization with horse manure. Regularly pinch off the shoot tips to encourage a beautifully branched and bushy plant. Avoid drying the leaves, as they quickly lose their aroma. Freezing is also not recommended, as the leaves become very mushy after thawing.
