Delicious everyday herb and basic seasoning

Chives are among the most popular culinary herbs and are even considered a "fine herb" in France. They are a member of the onion family with long, thin, tubular leaves. The hollow, smooth stems grow to about 25 centimeters long.

Natural habitat:  The origin of chives is unclear, but they likely originated in Central Asia and spread to the Mediterranean region through cultivation.

In the kitchen:  Chives are not only delicious on buttered bread, but also in soups, sauces, salads, with eggs, meat, and many other dishes. While you can harvest fresh stems in the first summer, you should be careful when pruning them initially. The goal of this first year is for the chives to grow as strong as possible. This will allow them to tolerate more severe pruning much better in the second year. You can harvest them year-round with sharp scissors. Only flowering stems are inedible. To prevent flowering, cut all stems back to about two centimeters in good time. The plant will then sprout again quickly. However, the pretty chive blossoms are edible. It is therefore advisable to allow some plants to flower.
