Long Purple is a widely cultivated variety that produces a good harvest of slender, purple fruits. These fruits are up to 17 centimeters long, smooth, dark, and cylindrical in shape. The flesh is compact, and the fruit contains very few seeds. Eggplant plants grow to around 130 centimeters tall and produce attractive purple, star-shaped flowers in late spring, from which the fruits develop over the course of the summer.

Natural habitat:  Eggplants originate in the subtropical region of East India.

In the kitchen:  With proper care, you can harvest the first eggplants as early as mid-July. Eggplants are ripe when the fruit has a beautiful sheen and yields slightly to gentle pressure. Eggplants are indispensable in moussaka, ideal for mixed roasted vegetables, or for creating your own fantastic curries. Before cooking, eggplants should be salted. One spoonful of salt per eggplant is sufficient. Then let them sit for about 30 minutes. This neutralizes bitter substances and draws water out of the eggplant. As a result, it absorbs less oil when frying.
