A creamy, firm alternative to potato wedges

The fruits of the Delicata variety are cream-colored, oblong with a green stripe. This variety produces delicious, well-textured flesh and is ideal for stuffing and baking. Each plant bears five to seven fruits, each about 20 centimeters long. Due to its bushy growth habit, it requires less space in the garden than other pumpkin varieties.

Natural habitat:  The pumpkin originated in South America. Today, it is cultivated worldwide in all warm regions. At the end of the 19th century, the pumpkin was introduced to the Japanese island of Hokkaido by American agricultural advisors. The Japanese then cultivated the delicate Hokkaido pumpkin from the then rather bland rice squash.

In the kitchen:  Pumpkins are very versatile in the kitchen. They are excellent for preparing soups, stews, and curries. Pumpkins can also be wonderfully prepared as a flavorful alternative to potato wedges. Put a little oil and spices in a bowl and coat the pumpkin wedges with the marinade. Then, cook the pieces in a hot oven for 20 to 30 minutes, until they are soft inside and crispy outside. Serve with salad and yogurt or guacamole, or as a side dish with chili.
