Crisp little cauliflower - Delicious stir-fried with Asian vegetables

Snowball is a popular and traditional cauliflower with small heads. Its pure white, smooth, and crisp head weighs approximately one kilogram.

Natural habitat:  It originated in Asia Minor. This vegetable has been cultivated in Europe since the 16th century.

In the kitchen:  Harvest as soon as the central floret is well-developed but still closed. Then cut off the entire stalk with the florets and dispose of the roots and remaining plant parts on the compost heap. You can store cauliflower in the vegetable drawer of your refrigerator for two to three days. After that, it will lose its firmness. The color will be preserved if you add a little sugar and lemon juice to the cooking water. Cauliflower is usually cooked in salted water and, for its attractive appearance, served whole. However, it can also be divided into smaller florets, which cook faster and more evenly. In Asian cuisine, small pieces are briefly stir-fried in a wok and served very crisp-tender. It can also be prepared raw in small pieces or briefly blanched as a raw salad. Cauliflower cream soup is easy and quick to prepare; simply add floury potatoes and a cup of cream, and season with a little nutmeg.
