Red is the new green - a colorful alternative to spinach

The leaves of Borecole Redbor are large, coarsely curled, and develop their violet-red color with the cool winter temperatures after the first frost.

Natural habitat:  Although originally native to the coastal regions of the Mediterranean and Asia Minor, kale is now primarily a specialty in Great Britain, Scandinavia, the Netherlands, and Northern Germany.

In the kitchen:  Before harvesting for the first time, you should wait a few days after the first frost. Only then do the plant's metabolic processes convert the starch into sugar, and the bitter compounds disappear. The leaves should be harvested from the outside in to encourage growth. Harvest regularly, as the tender leaves are particularly flavorful. The young leaves can be eaten raw in salads. You can also blanch the leaves briefly to make them tender. They then offer a delicious alternative to spinach. Redbor is also tasty in hearty cabbage dishes, but it's also suitable for casseroles or, dried and salted, for chips.
