True pepper grows as a climbing plant on trees and is cultivated like bean plants on trellises. After about three years, the inconspicuous flowers develop into red-skinned peppercorns, five millimeters thick when fully ripe. Green peppercorns are made from unripe peppercorns, black peppercorns from dried, fully ripe peppercorns, and white peppercorns from the removal of the outer skin. Pepper's appetite-stimulating and digestion-promoting spiciness comes from the alkaloid piperine, which activates heat and pain receptors, reflexively causing salivation and the release of digestive enzymes. True pepper can easily be kept indoors year-round.

Natural habitat: Originally, pepper comes from the Malabar Coast in southwestern India and spread to Indonesia and Malaysia with the expansion of Indian culture. Today, the largest growing regions are in Vietnam, Indonesia, India, Brazil, and Malaysia.
