Interesting facts: Lentils originated in Asia Minor and are among the oldest legumes. Archaeological finds date them back to 7000 BC. Only whole, unhulled lentils are suitable for sprouting. Hulled varieties, such as yellow or red lentils, unfortunately do not sprout. The sprouts should be eaten before small leaves appear, which is usually after four days. Due to their high protein (approximately 24%) and carbohydrate (approximately 55%) content, lentils have a high nutritional value. Therefore, they are an important staple food in many countries around the world. They also provide a variety of essential B vitamins, vitamin A, and minerals. With their slightly sweet, nutty flavor, lentils are ideal for salads, soups, and sauces. They also go well with casseroles or grain dishes. Due to the trypsin and chymotrypsin inhibitors they contain, large quantities should only be consumed when cooked.
