Adzuki Bean SproutsEnjoy the pea-like and slightly nutty taste of your homegrown adzuki beans best in Asian dishes, salads or wraps, or as a topping in dips, soups, woks and stews. Interesting facts: Adzuki beans originally come from East Asia, where they are a very popular food, both cooked and sprouted. These sprouts are very high in protein and therefore particularly suitable for vegans and vegetarians looking for alternative vegan protein sources. Adzuki beans contain vitamins B1, B2, B3, B6, B9, and C, as well as the minerals iron, calcium, copper, magnesium, zinc, phosphorus, and manganese. The sprouts reach maturity after two to four days, when the white roots have reached a length of about 2 cm. This time is needed to neutralize the lectins in the beans. NOTE: Adzuki beans are more digestible after sprouting or in sprout form; however, they should be cooked for a few minutes before consumption, as they are otherwise toxic, like other beans. The best way to grow sprouts is in the SAFLAX sprouting jar, which is available separately or as a starter set with three organic sprout varieties. |
