They also contain essential amino acids such as tryptophan and tyrosine-7, as well as magnesium, iron, potassium, calcium, zinc, and phosphate. Unlike some other sprouts, alfalfa sprouts need a week to germinate before they can be eaten. This longer germination period is necessary to break down the natural defense compound canavanine. Therefore, the sprouts should not be eaten before the seventh day of germination! Their slightly bitter, fresh flavor is ideal for Middle Eastern dishes, soups, sandwiches, wraps, and salads.
